Apple crumble cupcakes








Today, i did a little baking and wanted to share with you my very own apple crumble cupcake recipe. I kept forgetting to weigh the ingredients as i just make things up as i go, but i went back over and measured things so i could share the recipe. They are so tasty and very fresh and perfect for summer.

Ingredients:

-Two peeled and sliced bramble apples (plus preferred amount of sugar for sweetening)
-110g caster sugar
-110g butter
-2 eggs
-110g self raising flour
-splash of milk

-150g plain flour
-100g butter
-50g caster sugar (if preferred)


- Preheat oven to 180C/350F/gas mark 4
- Heat and cook the cut up apples in a saucepan until soft. I added around 50g sugar to my two apples, but you can change this to how sweet you want the apples to be.
-Cream the butter and sugar together in a bowl. Add the eggs and mix and then add the flour.
-Add a splash of milk to the mixture. Now you can mix in the softened apples.
-Fill the cupcake cases around half way and cook for 5 minutes and remove from the oven.
-Rub together plain flower, butter and caster sugar in a bowl to create a crumble.
-Sprinkle the mixture onto the top of each cupcake, making sure you get a good covering.
-Put the cupcakes back into the oven and cook for a further 15/20 mins.
